It’s been over 6 months since we saw truly hot weather here in the midwest, and the fruit selection at the grocery store leaves much to be desired. Apple Berry Crisp Cake
Saturday, February 16th, 2008Although it’s easy to find simple baked goods like apple pie or brownies, it’s a little tougher to find something a little less ordinary like this Apple Berry Crisp Cake from Macy’s. The cake has a mixture of apples, blueberries, and cranberries packed into a shortbread crust and covered in a streusel crumb crust. As if that weren’t enough, the top of the cake is drizzled in creamy caramel.
I wouldn’t exactly call it healthy, but it sounds delicious. If your individual health insurance adjuster saw you eating this cake, I’m sure he’d be cringing. Unless you offered him a piece, of course.

Coconut Layer Cake
Friday, February 8th, 2008Coconut cakes are one of those things that can either be very, very good or very, very bad. A good coconut cake is soft and mild, with only a slightly disruption in texture from the coconut flakes (unless they’re toasted, of course). A bad one is like eating a cake covered in fingernail clippings - not at all pleasant.
While I’ve definitely suffered through my fair share of bad coconut cakes (and pies, and cookies), I doubt that Macy’s would have made a mistake like that with their Coconut Layer Cake. They describe it as, “Caught in a snowstorm of soft coconut flakes, this cake offers a light treat with tons of taste. Beneath the coconut you’ll find an airy vanilla chiffon cake filled with delectable butter cream.” That sounds a lot better than some of the coconut cakes I’ve had in the past where the coconut flakes had the consistency of fiber optic cables.
What coconut lover wouldn’t want that?
